Traditional Classical Method Brut
| Sparkling wine obtained with the method of re-fermentation in bottle of a cuvée (mix) consisting of pinot noir processed in white and the typical Chardonnay of our region. At the combination of these wines we add fermentation aids (leavens) a very important factor for the qualm of the sparkling wine and cane sugar accurately dosed to enhance the re-fermentation (with production of foam); then the wine remains on the leavens at least two years to get a richer bouquet and fine savour. After this period of ageing and maturing we carry out the rémuage (circular movement of the bottle made by hand) and the dégorgement (the part of wine in contact with the cork is thrown away to eliminate the lees); sometimes we add the liqueur d'expédition, the special syrup giving the wine its peculiar savour. The bottle closed with the traditional natural cork and wired is stored in our cellars some months before being packaged and sold. Flute glasses or, even better, tulip-shaped glasses enhance the whiteness of the bright foam, the fine and persistent perlage, the bright and light yellow colour, the delicate and pleasant scent, a discreet, soft, full-bodied and extremely light aroma. |
Moscato d'Asti
| DOCG wine (controlled and
guaranteed denomination of origin) obtained from grapes
of white muscat vines, the most ancient vine grown in
Piedmont and the first descriptions of which with the
name of apiance and apicace date back to the Romans and
the etymology of its ancient names underlines the
particular love of the bees that like sucking its golden
berries ( as a matter of fact "api" means
bees). It is one of the most characteristic wines
produced in Piedmont. Straw yellow or gold, more or less
intense and with its intense but not sickening savour, It
shows the delicate and intense, unmistakable musk aroma
of the grapes from which it comes. Its alcoholic content
reaches only 5 degrees. It is a classical and light
dessert wine and can accompany every pleasant moment; we
recommend to drink It young and cool to better appreciate
the pleasant taste and its peculiar and fine

Pinot Chardonnay
| Obtained from a balanced mixture of Pinot and Chardonnay. The sparkling wine is processed with the Charmat Method (fermentation in autoclave) and opportunely aged at least three months. It attains an intense bouquet with light yellow colour and greenish tones, fresh and persistent flavour, fine, light and pleasant savour. This traditional aperitif is now appreciated to accompany the whole meal. |
